To help a friend in need, I found myself whipping up a batch of cupcakes at 10pm. Was glad to be of service...18 cupcakes coming right up!

it was exactly 9:45 around this time, ending a busy day baking haha

Was too lazy to use and then clean the big ol' mixer so hand mixed all of these..

Truly surprised on how I was able to get cold butter to this consistency just by hand whisking. Success!
