Just like mom's cooking!
I never really craved Filipino food back home. But with mom back in MNL, I figured it was time to learn some classic Filipino dishes just it case.
With this adobo, I tried to recall the basic ingredients that mom would use on her adobo and then just played everything by ear. I proudly call my version "Busy Guys Adobo" because it really is something you can just leave alone while you go get some work/errands done.
INGREDIENTS:
1/2 cup Soy Sauce
1/2 cup Vinegar
Handful whole black peppercorns
4-5 Cloves Chopped Garlic
2 sprigs of Bay Leaf
6 pieces Chicken Thighs
PROCEDURE:
In a large pot pour in the soy sauce
Then the vinegar
In goes the garlic.
I like adobo with lots of garlic flavor
Peppercorns
and then the Bay Leaf
add in the Chicken Thighs
Put the lid on and let the dish cure/marinate for at least an hour..
I left mine on the counter for about 2 hours since I stepped out to do some errands
After curing/marinating, place the pot on the stove and bring to a boil at medium-high heat
Once boiling, put back the lid and reduce heat to low..
Let the adobo simmer for about 20-30 minutes or until chicken is cooked all the way through
Served on top of Garlic Rice
I really liked how tender the chicken came out and with the flavors really being absorbed by the meat. The curing/marinating process really helped in melding the flavors together, making this really strong, flavorful broth (which actually gave me an idea for a fusion dish)
My sister really liked it and asked if she could bring the leftover to work tomorrow so I guess it was good lol!
