White Chocolate Cranberry Cookies

 Inspired from the Adventures of Hammer and Potato!


In search for something new to whip up in the kitchen, I stumbled upon a very interesting cookie recipe from my friends over at Hammer and Potato. I was immediately drawn by the addition of Cranberries to a basic chocolate chip cookie because i figured it would give it a burst of a sweet-tart flavor. 

After reading the recipe and keeping in mind the helpful notes that Hammer and Potato have written, I came up with my version inspired by their recipe. I say "my version" because the contents of the pantry did not cooperate and just had to make do with what they gave me lol.


WHITE CHOCOLATE CRANBERRY COOKIES


 INGREDIENTS:
1/2 cup unsalted butter, softened

1/2 cup light brown sugar

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 egg

1 1/2 cups all purpose flour

1 1/2 teaspoons baking soda

A pinch of salt

1 cup dried cranberries, chopped

1 cup white chocolate chips


PROCEDURE:
 Preheat oven to 350 degrees F
In a large mixing bowl, sift together flour, baking soda, and salt. Set aside.

On a mixer fitted with a whisk attachment, cream butter and both sugars together until nice and smooth.

Add the vanilla and egg.

Gradually add dry ingredients into the wet ingredients.

Once the mixture is just combined, add in cranberries and white chocolate chips.

Let the dough sit in the fridge for at least 15 minutes (Just have this thing for letting my cookie dough rest)

Drop the cookie dough by heaping spoonfools onto a baking sheet.

Bake for 12 to 15 minutes, or just until the edges are golden but the tops are still soft.

Cool on a wire rack.
