Staying in on a Friday night..
I usually opt to save pasta for weekends (trying to watch carb intake). Being home alone on a Friday night, I found an excuse to whip up a "cheat" meal with help from Rachel Ray.
For this dish, one simply needs:
Small package white mushrooms
Small Onion
Garlic
Dry white wine
Cream
Parmesan Cheese
Green Peas (optional)
Place some egg pasta in a pot of boiling water
Don't forget to salt your pasta water
*also, egg noodles tend to take longer to cook but the patience surely makes a difference!
sauté mushrooms in olive oil and a little bit of butter
(butter is just for flavor so a tbsp would do)
season mushrooms with salt and pepper
Once the mushrooms are tender, add minced onions and garlic
When the onions are translucent, deglaze the pan with some white wine
Let the alcohol burn off for a bit and then you may add the cream
Bring sauce to a boil and then turn down the heat, allowing the sauce to slowly simmer and let the flavors marry
Directly place cooked pasta straight from the pot of water into the mushroom sauce
Sprinkle Parmesan and a handfull of peas (if you wish)
*no need to defrost frozen peas since the heat from the pasta would warm them up but allow the peas to keep their color and crunch
Dinner's served!
