Learning from Auntie Julia

Another pasta dish for dinner!

If you don't have a jar of marinara sauce in hand (I finished mine with the Chicken Parmigiano I had for lunch haha), Chorizo Bilbao would be your best friend because they're packed with so much flavour that a simple sauté with olive oil, garlic, and onions would give you an amazing pasta sauce.

Top with lots of parmesan cheese!!

Leftovers: Quickie Chicken Parmigiana

In my opinion, the most versatile food one could buy from the supermarket has to be rotisserie chicken!

Every supermarket or grocery chain has their own version and the beauty to it is that even if you're not particularly fond of the flavor (some tend to be bland), they're already cooked! Which means less dishes to clean :))

So with a bottle of marinara sauce in hand, one can always make a quickie chicken parmigiana!

Simply take a quarter of the rotisserie chicken and then top with a generous amount of marinara sauce and lots of parmesan cheese! Cover with clear film and then microwave until smoking hot!

Today I opted to have mine with a simple pasta side of butter, garlic, and rosemary

Post Vacation Blues

While my sister is now back to work and I'm at the condo still sick and hiding under the sheets,

it couldn't be helped that we were both going through vacation withdrawal.

So to ty to brighten up our moods, Car whipped up a quick and easy Caprese Salad made with diced tomatoes, bite-sized fresh mozzarella, a couple of basil leaves and a sprinkling of lemon vinaigrette.

I really hope I'm back to 100% tomorrow..
