Mom's Rosemary Lamb Chops

Came home to this surprise for dinner!

Mom's Rosemary Lamb Chops with a very simple recipe. All she does is season the chop with salt and pepper and then a dry rub consisting mainly of ground, fresh rosemary. You may opt to add other herbs but we like to keep it simple since lamb has its very own, unique taste which you don't want to distract from.

Served with a side of French Beans sauteed with Garlic, Steamed Sweet Potato, and Mint Jelly.

Dinner is served!

Homemade Banana Chips with PB&J

I wasn't really in the mood for something heavy for lunch. Luckily our cook prepared some Banana Chips. These aren't like the usual deep fried ones that come in a plastic bag, but rather thinly sliced bananas which were lightly fried on a skillet to give it a crunchy exterior but still with a soft, chewy center. Best enjoyed with large spoonfuls of PB&J!

Mom's Surf and Turf Night

A surf and turf feast for our visiting guests

A slow day at the office really ruins any diet.

For merienda, one of our agents was very kind to treat us for some pizza in the office. We got to try Shakey's Texas Chicken Barbeque.

Thin, crispy crust smothered with tangy barbeque sauce and topped with a generous amount of chicken and onions. Although the barbeque was nice and tangy, I found it a bit sweet. Would have preferred a much more smokier tasting barbeque sauce to really give it the Texan feel. I also liked the addition of pesto to drive away from the sweetness of the barbeque sauce however it threw me off a bit because it also took away from the whole Texan them. But kudos to Shakey's for being extra generous with the chicken! I was able to get a chunk of chicken with every bite!
