Spectrum at Fairmont

With humungous macarons greeting us at the hotel foyer, we immediately knew that we were in for an amazing experience!






 After having an awesome birthday celebration last night with friends, tonight was gonna be a special dinner strictly for the family which Dad had planned for us at Spectrum.

It was clearly noticeable that Spectrum used the freshest catch for their selection of sushi and sashimi that I just had to have another helping of shake sashimi.

The duck was perfectly tender while the suckling pig had an impeccably crispy exterior

 With the mussels being super fresh, I just had to try them Rockefeller style.

Keeping in line with the fresh theme, Spectrum's pizza corner will make you a fresh pizza upon every order






 Now for the carving..

Rib Eye with Yorkshire Pudding and Roasted Veggies

The meat was beautifully seasoned without actually needing a whole lot of gravy. I also liked that the Yorkshire pudding was light and almost souffle like.






 
 For a palette cleanser..

Mascarpone with fresh honey and pistachios






 
 That is how fresh the honey was.. straight from the honey comb!!






 Since it was Chinese New Year after all..

 For dessert, Spectrum's deconstructed crepe

Delicate crepes filled with pastry creme that was served with my preference of caramelized bananas, vanilla bean ice cream, and caramel drizzle. A refreshingly new take on crepes!






 
 Of course we had to try their macarons. 

The cookie had a beautiful crumble and crunch. I would've preferred the filling though to be more creamy and luscious.

We originally planned on bringing it home, but it was soo good that we ended up finishing it at the table..



Spectrum now has become one of my favorite places in Manila!
What really sets them apart from the usual hotel buffets is that rather than having a smorgasboard of dishes and cuisines, Spectrum narrowed down their menu to select dishes which they know they can execute beautifully and also using only the freshest, top quality ingredients they could find. Definitely looking or an excuse to go back!
