Back in the kitchen thanks to Auntie Giada
Inspired by watching re-runs of Auntie Giada showing in the Food Network, I decided to treat Car and I to "fancy" midweek dinner. Thankfully Raley's is just a few blocks away and had a good deal on salmon fillets.
For this dish you would need..
Broiled Salmon with Herb Mustard Glaze

Ingredients for the Glaze:
2 garlic cloves
3/4 teaspoon rosemary
3/4 teaspoon thyme
1 tablespoon white wine vinegar
1 tablespoon extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
Simply place all the ingredients in a mini food proccesor
Pulse until you get a smooth, pasty consistency.
Set aside your glaze and then prepare the salmon.
Instead of cutting the salmon fillets, I opted to keep mine whole which means cooking it longer then Auntie Giada's. So for my version, all I did was to place a piece of foil on top of a baking sheet which i then drizzled. with olive oil. Place the whole salmon fillet then drizzle with a little bit of olive oil and salt and pepper.
Place salmon under a preheated broiler for about 10 minutes. Generously smother the prepared glaze on top of the salmon and then place under the broiler for another 5 to 7 minutes.
The final product
I took a shortcut and served the salmon with Rice-a-roni!
The zesty, aromatic flavours the mustard glazed was balanced with the creamy texture of the salmon.
The rice-a-roni was also a welcome addition which helped mellow down the strong flavors from the glazed salmon.
I highly recommend this salmon recipe! Simple yet downright delicious!
Car is already asking me to make it again haha!
