A light dinner for one as a spend a chill Saturday night home alone..
Instead of the usual wine and cheese platter.. I decided to make good use of the stove top grill.
Just threw in a few pieces of dry-seasoned chicken tenders, tomato slices and broccoli until they were tender and had beautiful grill marks. Then topped to broccoli with a few chunks of fresh mozzarella to add a little something extra.
A little drizzle of greek style vinaigrette and you are done!
Dinner is served!
