a trip down memory lane
Back when I was still about 8 year old, there was one afternoon when mom was out and it was only my 17 year old sister looking after Car and me. Being it was right after school, we were all hungry but mom wasn't there to fix us our usual afternoon snack. So with all the contents she could find in the pantry, Sher whipped up what she fondly called Spicy Tuna Rice. As years passed, this fried rice dish just stuck, and whenever we had nothing to eat after school, Sher would gladly make us some.
But it has been a couple of years since we all graduated from college (or that we were actually home in the afternoon lol) that we actually forgot about this Spicy Tuna Rice. It was only recently that we remembered about it when Car and I actually forgot to stock our freezer with meat and all we had in the kitchen were eggs, cans of tuna, and rice. Ergo, we made Spicy Tuna Rice!
Spicy Tuna Rice
INGREDIENTS:
2 cups cooked white rice
Half an onion, minced
3 cloves of garlic, minced
1 can of tuna in oil
1 can of spicy tuna in oil
Soy sauce
2 eggs
1 of can corn
PROCEDURE:
-Saute onions and garlic in a little bit of olive oil
-once the onions are translucent, add in both cans of tuna (drain the oil first before adding them in)
-toss in the rice
-drizzle in some soy sauce
This is really to taste so you can add as much as you like
-make a well in the center and then pour in the eggs which were beaten in a separate bowl
-mix the rice until the scrambled egg is incorporated and then toss in the corn
and Spicy Tuna Rice is served
Just like how we remembered it!
The easiest recipes are sometimes the ones that are the most comforting..
