Truffled Soft Boiled Eggs

how to make perfectly soft, boiled eggs!



I'm a sucker for undercooked eggs! There's something about a runny yolk that just reminds of of cheese sauce, but a very light yet velvety one.  But since we can't always have a fried egg with a soft yolk or poached eggs since they're only good when there's a slice of bread, ham, and hollindaise involved.. the next best thing and actually one of the most versitile is soft-boiled eggs!

I actually learned to enjoy eating soft boiled eggs from my friend Raisa who would pack two soft boiled eggs soaked in soy sauce and then eat it in the car on our way to school. Reminded me of ramen eggs lol.

So going back.. to make the perfectly soft boiled egg, you would need..

SOFT BOILED EGGS

INGREDIENTS:

Room temperature eggs
Pot filled with enough water to sumberge the eggs in

Water and ice for an ice bath


PROCEDURE:
 
Bring the water to a heavy boil






Gently drop in eggs one at a time

Time the eggs for exactly 6 minutes !






Immediately after six minutes, fish out the eggs and drop them into the ice bath...

This stops the cooking process and helps make it easy to peel the shells off





Always comes out perfect!






a little sprinkle of truffle salt goes a long way!






and serve on a bed of blanched veggies!




A light, healthy lunch which would keep you going for the rest of the day!
