Baked Mahi Mahi with Rosemary Parmesan

 
A hearty yet healthy dinner


When we were younger, there's was always that understanding that our parents would only be able to feed us our vegetable if it was smothered with cheese. Even if we're already in our 20's, its still my go to trick to get my sister to eat her fish and vegetables. I mean she eats fish and veggies on a regular basis, but a broiled piece of fish and a side salad just isn't gonna cut it especially after a long day's work. Thats why when it comes to a hearty fish dish, nothing beats baking smothered with mayo and cheese. Today we're going with the freshest looking catch from the store, Mahi Mahi.


BAKED MAHI MAHI WITH ROSEMARY PARMESAN

INGREDIENTS:

2 fillets Mahi Mahi

2 sprigs Fresh Rosemary

3 cloves of Garlic

Approx. 2 tbsps Olive Oil

1/2 cup mayo

1/4 cup minced onions

1/2 cup freshly grated Parmesan



PROCEDURE:

-Place the mahi mahi fillets in a lightly oiled baking dish






-with a mortar and pestle, crush the rosemary and garlic cloves together






-crush the garlic and rosemary until you get a rough paste

You can also add the olive oil at this point to help bind the mixture. 






-in a seperate bowl, mix together the mayo with the chopped onion






-generously spread the garlic-rosemary mixture on the fish followed by the onion-mayo mixture






-sprinkle the parmesan cheese on top followed by a few rosemary leaves for added presentation






-bake in a preheated 350F oven for 20-25 minutes

and dinner is served!


Goes perfectly with sauteed green beans..
