Blackened Red Snapper

What to do with today's fresh catch?


This little beauty was just too enticing to pass up that I had to buy and it cook it for lunch. With that beautiful red color, I started to get more inspired as to what I can do with this fish that simply grilling it with salt and pepper was not an option.

So with all the herbs I could find in the pantry, I ended up with a Cajun inspirde dry rub which is my take on a Blackened Red Snapper.


Blackened Red Snapper

INGREDIENTS:

 1 fillet Red Snapper

   2 tbsp paprika

2 tbsp cayenne pepper

1 tbsp ground black pepper

1 tbsp garlic powder

1 tbsp salt

1 tbsp oregano

1 tbsp thyme



 DIRECTIONS:
 
-in a deli cup, put all of your dry rub ingredients






-close the cup and shake well 






-generously cover both sides of the fish

but you don't have to finish the dry rub because that would be overkill! 






-grill fish on a grill pan set on medium high heat






look at those beautiful grill marks!






Lunch is served with a side of spinach with grilled mushrooms together with some grilled eggplant and tomato slices
