Just because its veggies doesn't mean it has to be boring..
Remember when watching cartoons as kid, they would always say that a way to enjoy veggies is to smother it with cheese. And then as we got older we also learned that absolutely anything is bacon. So I figured why not merge these to awesome things together to make one amazing veggie dish which everyone would actually enjoy. Ergo, a veggie casserole overloaded with bacon and baked in a rich cheese sauce.
VEGGIE-BACON CASSEROLE
INGREDIENTS:
Half a cup of butter
Half an onion
1 whole scallion
2 tbsp Flour
1 1/2 cups Milk
100 grams of Swiss Cheese
2 heads of Broccoli
2 Zucchini
1 pack Baby Carrots
Half a pack of Bacon, cooked and chopped
Salt and Pepper
1 cup breadcrumbs
PROCEDURE:
-cut all of your veggies into bite sized pieces while finely mincing the onion and scallion
-saute onions and scallions with the butter
-once the butter is melter and the onions translucent, you can add the flour
We're sort of making a rue at this point
-once the flour is well incorporated, pour in the milk
-throw in the cheese
I bought a block so i just rough chopped the cheese into cubes
-season with salt and pepper
-Throw in the veggies
I opted to use raw vegetable rather than blanching them so that they maintain a certain crunch after baking
-can't forget the bacon!
-place into your desired baking dish
I let mine sit for a bit in the dish just to that the things can mellow a bit in the dish (and because I had an errand to run lol)
-Once you're ready to bake, cover the top with the breadcrumbs and bake the casserole in a preheated 350F oven for 35 minutes.
And there she is.. what a beauty!
I actually enjoyed eating this served on the side of Roasted Turkey breast. Just another simple dinner idea for you or maybe even something to bring to a potluck!
