Bacon. Lettuce. Truffled Egg Salad
Some Saturdays are spent waking up bright and early and heading over to the farmer's market to stock up on some fresh produce along with getting some inspiration on what to cook next.
Most Saturdays however are spent lazily lounging around in the couch in pajamas and watching the Kardashian marathon on the E network. And so it happened to be one of the Saturdays in which the only time reality hits is when the marathon ends and you realize its already 12 and haven't eaten anything.
What to do what to do...
Of course.. BACON!
"BLT" SALAD
INGREDIENTS:
1 pack of Bacon (yes, 1 whole pack!)
2 eggs
A bag of mesclun greens
Balsamic Vinegar
Olive Oil
Parmesan Cheese
Truffle Salt
PROCEDURE:
-fry up the bacon until nice and crisp
-in a large bowl, make the salad by tossing together a couple of handfuls of mesclun greens, a drizzle of balsamic vinegar, a glug of olive oil, and a sprinkling of parmesan cheese. Toss and forget about it.
-Next is soft boil the eggs just like how I showed you before
-plate everything together on a serving bowl and sprinkle a little bit of truffle salt on the top
Crack the egg and enjoy!!
Just because it's a lazy Saturday doesn't mean lunch should be too..
