Foil Baked Summer Tilapia

Fresh and bright just like summer..


We've been trying to eat more healthy stuff in our household these past few weeks which involved staying away from red meat as much as possible and having healthier, smarter choices such as fish.

Luckily the market had some fresh tilapia fillet's in store which looked too good to pass on. And with the summer heat now back and in full blast, I found the vibe inspiring to make an easy fish recipe that would mimic the bright, fresh flavors of summer.

Foil Baked Summer Tilapia

INGREDIENTS:
1 Tilapia Fillet

Pinch of Salt and Pepper
 
 2 cloves garlic, minced

1/4 of an onion, minced

1 tomato, chopped

Half a Lemon, thinly sliced

   PROCEDURE:
-Preheat your oven to 400 degrees
(I used a convection oven toaster)
 -chop your veggies

When thinking fresh and bright.. always go with lemons and tomatoes!






-place the fillet on a baking sheet lined with foil






-drizzle with olive oil on both sides





-Sprinkle with salt, pepper, and garlic






-layer the lemons nicely






-finish off with the tomatoes and onions






-Wrap the foil up and bake in the preheated oven for 10 to 15 minutes






The perfect bite paired with a spinach and arugula salad tossed in a light lemon and olive oil dressing
