Sinigang Rice

Can't enjoy Sinigang without rice!



So with the chicken done, I figured I needed to jazz up the rice and incorporate another sinigang ingredient into it which are the tomatoes. Tomatoes are actually used in sinigang to give the dish a a fresh yet tangy undertone which breaks up the strong, sour flavor of the tamarind. So with this in mind, I came up with my version of Sinigang Rice.


Sinigang Rice

INGREDIENTS:
Half an onion, finely chopped

2 cloves garlic, minced

1 tablespoon sundried tomato paste 

1 to 2 tablespoons Sinigang Mix

1 cup rice

1 cup water


PROCEDURE:
  
-sautee onions, garlic, and sun dried tomato paste in a little bit of olive oil

You can always use regular tomato paste but I find sun dried tomato paste to have a sweeter taste.






-add in the Sinigang Mix






-followed by the rice






-after coating each rice bead with the tomato mixture, add in the water






-bring the water to a boil and then cover the pot and turn down the heat to low

Let the rice slowly simmer until cooked and fluffy





and lunch is served!


I really liked how everything came together with the rice having alot of flavor but still subtle enough to just compliment the tangy flavors of the chicken.
