Found a fresh catch from the market...however it took a while to figure out what to do with it..

Lobster Mac and Cheese!!!!
Despite the it rather decadent name..Lobster Mac and Cheese is actually very easy to make..
Here's my take on Auntie Ina's Recipe
Lobster Mac and Cheese
Ingredients
1 pound elbow macaroni (cooked and drained)
1 quart milk
1 stick unsalted butter (divided)
1/2 cup all purpose flour
4 cups grater gruyere cheese
2 cups extra sharp cheddar
1/2 teaspoon nutmeg
Salt and Pepper to taste
1 1/2 pounds cooked lobster meat (chopped into bite sized pieces)
1 1/2 cups day old bread (grated using a food processor)
Procedure
Preheat oven to 375 degrees
In a small pot, heat milk but do not boil
In a large pot, melt 6 tbsp of butter and add the flour. Cook over low heat for about 2 minutes or until flour is cooked. Whisk continuously and then slowly add the heated milk. Cook until you have achieved a thick consistency. At this point you would have made your white sauce base starting with a roux. Remove from heat and then whisk in all the cheeses. Season with salt, pepper, and nutmeg.
Toss pasta and lobster into the cheese sauce and then place into your baking dish.
In another pot, melt the remaining butter and then add the crushed day old bread. Top on pasta dish.
Bake in the pre-heated oven for 30 minutes or until beautifully golden and bubbly!
